It’s almost snack time, and you’re a little hungry? These fiber-rich apple muffins 🍎 are easy to make and will hold you over until dinner. These little treats are also great for those who have gluten and lactose intolerances.
Ingredients10 muffins
- 3 eggs
- ¾ cups of applesauce
- 2 tablespoons of honey
- 1 ½ cups of buckwheat flour
- 1 teaspoon of baking soda or yeast
- 2 apples
- ¼ cup of raisins
- 1 pinch of salt

In a bowl, mix the eggs with the apple sauce and honey.

Add the flour, baking soda, salt, and then whip together.

Peel then cut the apples into small cubes.

Add the apples and raisins to the dough, and then mix to combine.

Fill the muffin tins ¾ of the way. If you don’t have paper liners, lightly oil the molds. Then, bake for about 15 minutes in an oven preheated to 350°F.

Before taking out of the oven, use the end of the knife to check that the muffins are cooked all the way through.
Don’t have buckwheat flour, can I just use gluten free flour?
I love the healthy basics of this recipe especially without the baking powder. This also works for savory crepes!
My muffin variation to increase the taste and still remain healthy is to use 1/2 oat bran & oat flour, add 1/2 cup plain yogurt, aadd cinnamon and coconut sugar.
I enjoy getting these emails and am going to try making these muffins. I won’t put in the raisins and I’ll substitute a different flour but am eager to see how they taste anyway. I will definitely take into account the information you provided when deciding what to do for supper meals. It would be great to be able to print recipes.
I made these for a family treat and my kiddos did not like them. My husband said, “they are just ok.”
Me personally, I don’t like the smell of buckwheat so that kept me from eating them. I’ll make again using a different flour.
